New ventilation requirements for restaurants in 2025: how to avoid fines and ensure comfort

Ventilation systems in restaurants and cafes are not just “supply and exhaust” but a complete engineering complex that determines guest comfort, staff safety, and compliance with regulatory requirements. In 2025, standards became stricter — let's break down what's important now.
❶ Air Exchange Volume
Minimum 60–80 m³/hour per person in the dining area. In the kitchen — air exchange rate from 15 to 30 times per hour. Separate exhaust ducts with grease filters are installed.

❷ Zone Separation
The supply system for the dining area must be independent of the kitchen. Zoning by type of premises (cold/hot shop, confectionery, dishwashing area) is mandatory.

❸ Smoke Extraction System
Mandatory if frying and open-flame equipment is present. EI60/90 fire dampers, smoke detectors, and exhaust fans with increased temperature resistance are installed.

❹ Noise and Odor
Ventilation should not disturb guests. Silencers and activated carbon filters are used to eliminate odors.
